It always seems to be larger engines, I guess they have a better chance of earning revenue once completed.

Actually, it is a relatively small loco, and of only 2 built by Gresley, hundreds if not thousands were built as LBSC's 'Bantam Cock' in 3.5"g, and a very successful design in miniature it proved to be (though the LBSC version had only 2 cylinders, unlike the 3 cylinders with conjugated valve gear in full size).

I suppose I mean they don't seem to be clamouring to make 0-6-0 panniers, or industrial shunters. I guess they were more easily preserved so more survive.

Well I expect to see it on the rails some seven days after the money is raised based on the excellent film LMS - General Repair on the Princess Royal thread! Its a shame all that engineering knowledge and skill has gone!!
