I would suggest that the height of the track is a function of how flexible your knees are.... Now that both mine are developing arthritis, I'm not very comfortable on tracks that are too close to the ground.
And if your knees are fine now, what is the life expectancy of the track..? Will it outlast your joints?!

There are many things to consider, including the actual track. Many like vertical rectangular metals, say 1in. x ¼in. - then all the crap falls down the middle. But, I find they tend to be noisy cos they ring better than Big Ben. So, a compromise perhaps, vertical wood with sleepers and track on top - the best of all worlds in my opinion. Rugby MES (not my society) are doing this presently - and it looks good to me.

I'm hoping at the age of 50 the knees have a few more years in them yet. I'm planning to aluminum rail on my setup. I'm greatfull for the suggestions and some thoughts need to be made. If anyone wants a summer project post lock down, my raised layout will welcome the assistance

Many thanks for your advice everyone. Much appreciated. Building will commence with particular reference to one’s knees.

I have not built a raised track, but this is a close up of one built by someone I know in their garden. I do not know that much about it but I do know the pillars are cast concrete, I think he had three moulds and cast three every day. The track is Aluminium rail mounted on wood sleepers, but plastic ones would be ok. The track support is square tube. hope it may be of use. Dave track close up by Dave Smith, on Flickr
