There would need to be a massive clearing out of plant and animal varieties.
For Cattle, something like the old short horns were easy calving, gave pretty good milk yeilds, didn't need a lot of suplimentary feeding, the bull calves fattened well and as bullocks were potential draught animals. That and the cows had a useful life span of 20 years or more,
compare that to a holstien which is skin and bone, gives gallons of watery milk, bull calves are killed at birth and the cow's feet and udder are beyond repair at 5 years... Beef Bugger time, udder, lungs and all.
The old Galloway cows will live on land that will never be fit to plough, grow slowly, give fantastic beef and the cows are still having calves at about 30 years old...
At the moment, the people who I kmow with moorland sheep are looking for a way out as they cost more to shepard and shear than the wool and lambs are worth (wool is actually worth fewer £ now than it was in the 1950's!).

have you come accross knight & lomas' books. they have 1 called "civilization one" which is a speculative look at the megalithic civilization of north western Europe. This predates Sumerarian and egyptian civilization.
It looks like the megalithic monuments were constructed to a standard measurement system, which relates quite nicely to volume measurements of corn etc veighed in the Avoir dupoi system.
The Sumerian civilization was supposed to have been founded by already civilized settlers sailing up the Persian gulf (? after sailing around the cape of Africa from Ireland?)....
I think there was a lot of technology, a long time before history: 10,000 year old polished obsidian mirrors in Turkey!
Going back to knight & Lomas; in one of their books they think that they have worked out the reason for the period of 40 cropping up time and again in the bible... Mercury and Venus appearing in the sky side by side. One occurance of this was supposed to have occured about 4 BC!
They have a lot to say about Venus, including its use to calibrate clocks, before the Atomic clock was invented. Newgrange Megalithic "tomb" in Co Meath actually measures this.
Aparrently one book which was missing at the time when Constantine was deciding what should go into the Bible, was the book of Enoch. a copy was found in Egypt about 1900, but was thought to be a fake as most of it was wierd astronomical stuff. Several more copies were found among the dead sea scrolls, and they were the same. In it Enoch (possibly areal person from the neolithic) describes in detail a solstice, his description of the night and day lengths fit with the latitude of Britian or Ireland and his description of the Building fits with NewGrange!
